Pork Loin in the Crockpot (Start this in the morning, 6-8 hours before dinnertime!)
In a small bowl mix together:
1/2 cup flour
1 tsp. salt
1/2 tsp. pepper
2 tsp. onion powder
1-1/2 tsp. granulated garlic
(Optional: 1/4-1/2 tsp. curry powder or chili powder, but only if you like your meat *spicy*!)
Pour the flour mixture evenly over a medium size platter, and then roll your pork tenderloin in it until well-coated (shake off the excess.) Sear the meat in a hot skillet, turning often to brown it all over. Have your crockpot ready and heating. As soon as the pork is nicely browned, curl it around on the bottom of the crockpot. Pour in 1 can of MILD Ro-Tel (drain the liquid first if desired.) Then pour in one can of drained black beans (Bush's Best are good.) Shift the meat in the crockpot a bit so some liquid gets underneath it. Then cover and cook on "cooking temperature" for 6-8 hours. The meat will be SO tender that it will fall apart!
If your family doesn't like anything spicy, then you can use any kind of tomato sauce or chunky tomatoes. The green chiles give it a wonderful flavor so it won't be *quite* the same if you don't use them. But it will still be good! :-)
Serve with rice or potatoes, and your favorite green veggie or fresh salad.
